Asking for Help - From YOU


Our 6 year old Space Ranger son is eating us out of house and home...its really starting to get insane. I'm having to buy groceries 2 times a week.

I am looking for EASY, FRUGAL, FILLING recipes that are KID FRIENDLY and will help us stretch our budget. Please submit your ideas below (links to recipes count as ideas.)

  1. Here's one of my kids favorites, and it feeds an army!

    Taco Soup:
    2 lbs ground beef
    2 can each black beans, kidney beans, pinto beans
    1 cup frozen corn (or 1 can of corn)
    1 can rotel tomatoes
    2 packs taco seasoning
    2 packs dry ranch dressing mix
    1 medium onion

    Brown ground beef and onion in skillet. Add the rest of ingredients to slow cooker. Add beef when cooked through. Cook on high 3-4 hours or on low 5-6 hours.

    Top bowls with shredded cheese, sour cream, green onions and cilantro. We like tortilla chips with ours too!

  2. All of these will go in the breakfast category but 2 are definetly versatile meals.

    Egg Bake (my kids ask for this often)
    1 can of cresant rolls 8 oz
    8 oz of your favorite breakfast meat chopped/crumbled
    6 eggs
    1/2 cold milk (soy works too)
    1/2 tsp pepper
    1 cup EACH cheddar and mozzarella cheese

    Heat oven to 350. Unroll dough in a 13*9 dish firmly pressing all the seems together. Sprinkle meat over rolls, Beat eggs with milk and pepper and pour over. Top with cheeses. Bake 25 min or until set.

    Baked Oatmeal (another one my kids like)
    3 eggs
    1 cup of applesauce
    2 cup milk
    1 cu of brown sugar
    3tsp cinnamon
    2 tsp vanilla
    1 1/2 tsp salt
    4 tsp baking powder
    5 cups old fashion oats
    Mix all together and pour into a 13x9 dish. Bake at 350 for 25 minutes. Serve with fresh fruit or I add blueberries or craisens to it before baking. Refidgerates and reheats well.

    Sausage and Grits Casserole
    2 cups of water
    1/2 tsp salt
    1/2 uncooked quick grits
    4 c sharp shredded cheddar cheese
    4 eggs
    1 cup milk
    1/2 tsp thyme
    1/8 tsp garlic salt
    2 lbs sausage cooked and crumbled

    Boil salt and water. Add grits and cook for 4 minutes stirring until thick and smooth. Stir cheese into hot grits and set aside. Combine eggs, mik and seasonings. Once grits are cooked, combine with egg mixture and stir in sausage. Pour into a greased 9x13 pan and refrigerate overnight. Let sit at room temp for 30 and bake at 350 for 1 hour.

  3. Pretty much everybody loves mashed potatoes, and Shepherd's Pie has long been a comfort food staple in our house!

    Shepherd's Pie

    3-4 cups leftover or instant mashed potatoes
    1 small onion, chopped
    1 lb. ground beef
    1 can or leftover corn kernels
    1 cup shredded cheese

    Cook ground beef and onion until browned, and drain meat. Lightly spray a 9"x13" pan with non-stick spray. Layer ingredients until all are used up in the following order: Potatoes, meat, corn, cheese, with the final layer being potatoes. Bake at 350 degrees until heated through and potatoes are lightly browned (about 20 mins.) Serve with condiments of choice...ketchup, Heinz 57 sauce, BBQ sauce, or a little melted butter are all popular choices.
